From the creators of Alma and Brasa, Caja is the new counter-service fried chicken and sides concept at Graze Food Hall. Caja (pronounced “ka-ha”) is the Spanish word for “box” and a nod to the classic fried chicken paper box or bucket.

Our menu is inspired by New Orleans Creole and Southern comfort food traditions, highlighting responsibly sourced chicken fried in beef tallow, a technique embraced by earlier generations that yields a unique and exceptionally delicious product. Guests can expect scratch-made sides and desserts that celebrate simplicity and deliciousness. Caja aims to bring a sense of warmth and familiarity to everyone.

WHY CAJA?

Our chicken is marinated in cayenne hot sauce, garlic, and spices, breaded in a seasoned flour blend, and pressure-fried in 100% beef tallow. We offer two styles: traditional and gluten-free. Both satisfying, well balanced, and rooted in the spirit of Southern cooking.
